2 ½ pounds green beans
6 medium red potatoes
salt pork (size of fist)
1 tablespoon sugar
2 tablespoons butter
beans, remove strings and break in halves. Place beans in a medium pot. Barely cover with water. Place salt pork in with the
beans. Allow to start boiling. Reduce heat to medium. Cook an hour or until the beans are tender. Wash and peel potatoes,
getting rid of all deep eyes and grit. I use a brush. Place potatoes in with beans. Remove salt pork. Add sugar and butter.
Allow to cook slowly until potatoes are fork tender and most of the liquid is cooked down. Do not add water unless beans are
totally dry. Do not add salt. Salt pork takes care of salt.
