1 cup raw rice
2 tablespoons vegetable shortening
1 small onion, chopped
½ green pepper, chopped
1 ½ teaspoon salt
2 teaspoons chili powder
1 10-ounce can tomatoes, chopped
2 cups water
Brown rice in shortening in a skillet. Add onion and green pepper. Stir. Add salt, chili powder and tomatoes. Add water. Cover and simmer 30 minutes or until rice is tender and liquid is absorbed.
This dish is good with Mexican food or fried chicken.
