Red Beans and Rice
1 pound dried red beans
1 pound smoked sausage
8-10 cups water
1 onion chopped
2 cloves garlic
2 stalks celery
1 large bay leaf
1 heaping teaspoon sugar
small salt pork (1/4 fist size)
3 cups cooked rice (we like white best)

Rinse red beans. Add all ingredients into a large pot except rice and bring to a boil, stirring frequently to prevent sticking. Reduce heat to low and cook 1½ to 1¾ hours. Add water if necessary while cooking to prevent pot from boiling dry. Fifteen minutes before done, mash 5 tablespoons of beans through strainer, then stir into liquid to make creamy. Salt pork will make beans salty enough.

Serve beans over white rice.
