French Coconut Pie
CHICKEN BROCCOLI
CASSEROLE
2 cups cooked rice
3 cups cooked chopped broccoli
1 cup sour cream
1/2 cup mayonnaise
1 T lemon juice
1
can Cream of Chicken soup
10 oz. (or more) sharp grated cheddar cheese
1/2 t salt
1/4 t pepper
4 chicken breast
cooked and shredded
Pre-heat oven to 350. Grease 9 x 13 baking dish with butter or spray with cooking spray. Spread
the cooked rice evenly over the bottom of the baking dish. Top rice with prepared broccoli. Mix sour cream, mayo, lemon
juice, soup, half the cheese. salt, pepper and chicken. Pour over broccoli and top with remaining cheese. Bake 40 minutes.
CORN & MACARONI BAKE
1 can whole kernel corn
1 can cream style corn
1 stick melted butter
1 cup cubed
cheddar cheese
1 cup macaroni (uncooked)
Pour both cans of corn into a 9 x 13 baking dish. Add butter, cheddar
cheese and uncooked macaroni. Mix and bake at 350 for 20 minutes. Remove pan from oven and stir. Return pan to oven for
10 minutes or until bubbly and set.
BABY LIMA BEANS
1 package green lima beans (frozen)
salt pork (about an
inch square)
2 T butter
1/2 t salt
1/4 t pepper
1 t sugar
water to cover beans
Place beans in a skillet
with water to cover and salt pork. Bring to a boil, place a lid on the pot and cook beans for 30 minutes. Remove salt pork
from beans; discard. Add butter, salt, pepper,
and sugar. Cook slowly 15 minutes longer. Be careful not to burn. Before
adding salt, TASTE! The salt pork may be all the salt you need for seasoning.
FRENCH COCONUT PIE
1 1/2 cup sugar
1
T flour
1 stick butter melted
3 large eggs
1/2 cup buttermilk well shaken
1 t vanilla
2 cups coconut
1 deep
dish pie shell
Preheat oven to 350. Beat sugar and flour with melted butter. Add eggs one at a time, mixing well after
each addition. Add the buttermilk and vanilla and combine again. Stir in coconut. Pour filling into pie shell. Bake 45
- 60 minutes or until lightly brown and the center of the pie doesn't jiggle when shaken lightly. Toothpick in center should
come out moist but not covered with custard. Coconut will rise to the top.
