Chicken Chili
1 pound white beans, soaked overnight and drained
6 cups chicken broth
1 T minced garlic
2
medium onions, chopped
2 T oil
2 (4 oz.) cans chopped green chiles
2 t ground cumin
1 1/2 t ground oregano
1/4
t cayenne pepper
4 cups cooked chicken
Combine white beans, chicken broth, minced garlic and one
chopped onion
in a large pot. Bring to a boil, reduce heat to
simmer. Simmer covered for two hours. While beans are
cooking,
saute remaining onion in oil. add chicken, cumin,
oregano and cayenne pepper. Add chicken mixture after the
2 hours
cooking. Add chiles and cook one more hour. Taste,
if salt is needed and it usually does; add a little and taste.
Add
Steamed Rice to menu. I prepare the rice in a rice cooker but don't tell nobody!
Herbed Sour Cream
1 cup
sour cream
2 T chopped fresh cilantro
2 T lime juice
1/4 t salt
Stir together and chill until ready to serve.
Serve with chili.
1 cup sharp cheddar, grated (serve with chili)
Jalapeno peppers (serve with chili)
Apple
Salad
Big red apple
2 T lemon juice
2 plus T MIracle Whip
Cut up a large unpeeled red apple into chunks,
sprinkle with lemon juice.
Stir in a couple tbs. Miracle Whip coating apple. I serve with chili.
Zesty Salsa
2
(10 oz.) cans Mexican diced tomatoes (Rotel)
1 (11 oz.) can whiole kernel corn, rinsed and drained
1/2 small green pepper,
diced
1/2 small red onion, diced
1/2 t salt
1/4 t cumin
2 T lime juice
Corn chips
Stir together tomatoes,
corn, bell pepper, onion, salt, cumin
and lime juice. Cover and chill until ready to serve, Serve
with corn chips
or thin chips from Chili's. Dip with chips.
Pina Colada Cake
Grease and flour 9x13 casserole.
1 package
Betty Crocker Super Moist yellow cake mix
8 oz can crushed pineapple
1/2 cup shredded coconut
2 t rum flavoring
1-8
oz. carton Cool Whip
Heat oven to 350. Prepare cake according to package but use pineapple instead of water. Stir
cocunut and rum flavoring into the batter. Pour batter into pan and bake according to package. Cool cake and frost with Cool
Whip. Sprinkle lots of coconut over the Cool Whip.
