Country Style Steak & Gravy
6 - 8 pieces cube steak (GiGi's)
1/2 - 1 cup plain flour seasoned w/1/2 t salt & 1/2 t pepper
Crisco for frying
Sprinkle steak with salt. Dredge in seasoned flour. Heat fry pan with Crisco until hot but not smoking. Place floured steaks into pan. Allow to brown; turn and brown second side. Set aside. Use an additional 1/2 cup or more flour. Add to steak drippings in the reheated pan. Stir until light brown. Add 1/2 t salt and 1 t pepper. Pour enough milk into the pan stirring until the gravy starts to thicken and take shape. Lower heat. Place steaks back into the pan...cover with gravy and allow to simmer. Add additional milk if gravy gets too thick. Now, that's good eating.
Fresh Green Beans
3 pounds fresh green beans
Remove strings and ends from beans. Wash. Place into a saucepan with fist sized salt pork. Cover with water. Allow to boil on high then reduce heat. Check often. Add water only if needed. Do not let beans boil dry and stick. Cook an hour until beans are done. Uncover and let the beans boil almost dry. Add 2 T butter and 1 T sugar. Taste. Add salt only if needed.
Sunday Potatoes
6 to 8 medium potatoes
Cover potatoes in water - boil until fork tender (hint--to prevent potatoes from boiling over, add 1/4 T butter). Remove potatoes from heat. Drain potatoes.
Add:
1/2 stick butter
8 oz. cream cheese
1 cup sour cream
1 T finely chopped onions
salt and pepper to taste
Beat with electric mixer until well blended and creamy. Place in a casserole; cover with foil and a lid. Keep in the fridge overnight. Warm next day. Delish.
Blueberry Ambrosia
1 cup small marshmallows
1 cup sour cream
1 cup pineapple chuncks, drained
1 cup canned grapes, drained
1 cup fresh blueberries
2 T sugar
Mix well. Keep in fridge.
Peach Cobbler
2 - 15 1/4 ounce cans sliced peaches
3/4 cup sugar
1 stick butter
1 cup self-rising flour
1 cup sugar
1 cup milk (I use 1/2 cup butter - 1/2 cup Carnation)
Preheat oven to 350. Empty 2 cans peaches in a saucepan. Add the 3/4 cup sugar. Heat until sugar dissolves in with peaches. Melt butter in 9 x 13 casserole. Pour peaches in over butter. Sift flour with the 1 cup of sugar. Mix. Add milk and mix until well blended. Pour flour mixture over peaches. Bake at 350 for one hour.
