Chicken Spaghetti Casserole, 7 Layer Salad, Sweet Potato Casserole, Brownies



Chicken Spaghetti Casserole



8 oz. spaghetti

medium sized onion

1/2 green pepper

1 cup celery

1 clove garlic

1/4 cup butter

4 chicken breast cooked and cubed

6 oz. tomato paste

1- 28 oz. can crushed tomatoes

3/4 cup water

1 t basil

1 t oregano

1 t thyme

1 cup grated cheddar cheese



Prepare spaghetti according to package directions cooking al dente. While spaghetti cooks, saute onion, green pepper, celery and
garlic in butter in a large fry pan until veggies are tender. Add chicken, tomato paste, tomatoes, water, basil, oregano and thyme. Add cooked spaghetti to tomato sauce. Spread mixture in a 9 x 13 baking dish. Sprinkle top with cheese. Bake covered at 350 for 30 minutes.



7 Layer Salad (the way I like it)



Place the following as listed in a glass bowl:

1/2 head iceberg lettuce torn in bite sized pieces

1 red onion sliced

1 can LeSeur peas, drained

1 1/2 cup sharp cheddar cheese

6 hard-boiled eggs, peeled and sliced round



Cover with 1 cup Hellmanns mayo mixed with 2 T sugar

1/2 pound bacon cooked and crumbled

Layer all ingredients as listed except bacon.

Wrap tightly with Saran. Refrigerate overnight. Reheat the crumbled bacon, add just before serving.



Sweet Potato Casserole



3 or 4 large sweet potatoes

1 stick butter

1 1/4 cups sugar

1/2 cup Carnation milk

1 t vanilla flavoring



Cover potatoes with water in a large saucepan until fork tender. Cool enough to handle. Peel. Add butter. Beat
well with electric mixture. Add sugar, milk and flavoring. Continue beating until well blended. Place in large casserole.



Mix:

1 cup brown sugar

1/2 cup soft butter

1 cup pecans

1 cup coconut

Place the 'mix' on top of potatoes. Bake uncovered at 350 for 25 minutes.



Brownies



2 sticks butter

5 T cocoa

4 eggs

2 cups sugar

1 1/2 cups flour

1 t salt

1 t baking powder

1 t vanilla

1/2 cup pecans



Melt butter in saucepan. Add cocoa. Set aside. Beat eggs, add sugar and cream together. Combine cocoa mixture with eggs and sugar. Add flour, salt and baking powder. Mix and add vanilla and nuts. Bake in greased 9 x 13 pan in 350 oven for 25 minutes. Do not overcook - should be soft.



Icing:

1/2 stick butter, melted

2 T cocoa

4 T milk

Enough powdered sugar to thicken



Combine and pour over hot brownies.
