1st Place Chicken - Alabama
3 cups cooked chicken, diced
4 hard-boiled
eggs, chopped
2 cups cooked rice
1 1/2 cups celery
1 small onion, chopped
1 cup mayo
2 cans Mushroom soup
1 - 3 oz. package slivered almonds
1 t salt
2 T lemon juice
1 cup bread crumbs
2 T butter
Mix
all ingredients except bread crumbs and butter. Place mixture in a 9 x 13 casserole. Brown bread crumbs lightly
in butter.
Sprinkle over casserole. Refrigerate overnight. Remove from fridge one hour before cooking. Bake 40 - 45
minutes in
350 oven. Serves 8.
Vegetable Salad
1 - 8 oz. can green beans
1 - 8 oz. can shoe peg corn
1 -
8 oz. can green peas
1/2 cup chopped onion
1/2 cup green pepper, chopped
1/2 cup red pepper, chopped
Dressing
1/2
cup vegetable oil
1/2 cup vinegar
2/3 cup sugar
Combine beans, corn, peas, onions, green and red pepper. Add
to veggie mixture and toss lightly. Season with salt and pepper. Serves 4 - 6.
Fried Apples
Slice
4 - 5 Granny Smith apples with peels. Set aside. Fry 1/3 pound bacon. Set bacon side for later use. Place apples in a fry
pan with bacon drippings. Cover. Cook on medium until apples begin to soften. Add 1 1/4 cups sugar. Cook slowly until sugar
dissolves and apples are done.
Japanese Fruit Pie
2 unbaked pie crusts
Mix together:

cups sugar
1 cup butter, melted
1 cup coconut
1 cup pecans
2 t vanilla
Add:
4 beaten eggs
Mix
well and pour into pastry shells. Bake in 300 degree oven 50 - 55 minutes.
