Roast Pork with Plum Sauce
Plum Sauce:
2 T butter
3/4 cup chopped onion
1 cup plum preserves
2/3
cup water
1/2 cup brown sugar
1/3 cup chili sauce
1/4 cup soy sauce
2 T prepared mustard
3 drops hot pepper
sauce
2 T fresh lemon juice
garlic salt to taste
Melt the butter in a saucepan; add onions and saute until
tender.
Add preserves, water, brown sugar, chili sauce,
soy sauce, mustard, pepper sauce, lemon juice and garlic
salt. Bring
to a boil; reduce heat to medium low and allow
to simmer for 15 minutes.
Roast Pork:
5 - 6 pound pork
loin roast
2 t salt
2 garlic cloves
1 t dried rosemary or 4 t minced fresh
1 1/2 t dried oregano
1 1/2 t dried
thyme
1 1/2 t sage
1/4 t pepper
1/4 nutmeg
Preheat oven to 325. Rinse roast to help hold seasonings.
Stir
together salt, garlic, rosemary, oregano, thyme, sage,
pepper and nutmeg. Use a sharp knife to make several rows
of
1/2 inch deep slits in the top of the loin. Press seasonings
mixture into the slits and rub the remainder all over the
roast.
Place the roast in a roasting pan and pour 1/2 cup plum sauce
over it. Cover and bake for 2 1/2 hours. Uncover
the roast and
baste it with additional plum sauce; bake 30 minutes longer.
Serve remaining plum sauce on the side for
a gravy or for dipping.
Let meat rest 15 minutes before slicing.
White Butterbeans
one lb. large white
butterbeans
Remove inferior beans and any 'foreign' objects.
Cover with water and allow two soak overnight.
Drain
beans. Rinse beans and pan. Cover with fresh water
and add salt pork. Bring to a boil, lower heat and simmer for
a
couple hours or until tender. Taste...the salt pork usually
makes the beans salty enough. Add one t sugar and 2 T butter.
Steamed Broccoli
2 bunches broccoli
1/2 stick butter, melted
6 - 8 oz. grated sharp cheddar
1/2 t salt
1/2
t pepper
juice of 1/2 lemon
Cut flowers from broccoli. Place in a saucepan. Cover with water.
Allow to come to
a boil. Boil two minutes; drain. Place in small
casserole. Pour lemon juice and butter over broccoli; sprinkle salt
and
pepper. Sprinkle cheese over veggie. Allow to melt just befoe
serving.
Easy Coconut Pie
4 eggs
1
1/2 cups sugar
1/2 cup self-rising flour
1/2 cup butter, melted
1 1/2 cup coconut
1 t vanilla
Beat eggs. Mix
ingredients in order given. Put in greased
10-inch pie pan (no crust required). Bake at 325 for 45 minutes.
