Peppered Pork Chops

12 center cut pork chops
1/2 t salt
1/2 t pepper
4 T vegetable oil
2 green peppers
2 (15 oz.) cans tomato sauce
2 cans stewed tomatoes
2 cups water
1 cup chopped onions
1 1/2 t salt
1 t pepper
1 clove garlic
3 cups rice
Sprinkle chops with 1/2 t each salt and pepper. Brown chops in hot oil. Remove, drain and set
aside. Cut tops off green pepper; remove seeds. Cut 12 rings from green pepper. Chop remaining
green pepper; mix with tomato sauce and next 6 ingredients. Spread rice in the bottom of
a 9 x 13 buttered casserole. Pour tomato mixture over rice. Arrange chops over rice mixture; top
each chop with a green pepper ring. Cover and bake at 350 for one hour or until rice and
chops are tender.

Broccoli Casserole
1 box frozen chopped broccoli
1 finely chopped onion
8 ounces grated cheddar cheese
1 can mushroom soup
3/4 stick butter
3/4 cup Minute rice
Melt butter in fry pan. Fry finely chopped onion. Stir in broccoli, soup and rice until well
blended. Pour half ingredients in a casserole dish; add half of cheese. Layer remaining;
top off with cheese. Bake in a preheated oven at 400 for 20 minutes.

Butter Beans
1 pound big white butterbeans -- grade and remove bad beans, grit and rocks
Soak beans overnight
salt pork (fist size)
Cover beans with water. Place pork in with beans. Allow to come to a boil. Reduce heat
to medium/simmer. Cook until done. TASTE! Add salt only if needed. Add 1 t sugar and
1 T butter. Do not allow to stick or burn. Add water only if beans are dry.

Ooey Gooey Peanut Butter Hershey Kisses Cake
Cake:
1 package yellow cake mix
2 eggs
1 stick butter, melted
3/4 cup Hershey Kisses
Filling:
1 (8 oz.) package cream cheese room temp.
1/2 cup peanut butter
3 eggs
1 stick butter melted
1 box confectioners sugar
3/4 cup Hershey Kisses

Preheat oven to 350. Combine cake mix, melted butter and eggs; mix with
mixer. Put the mixture into a greased 9 x 13 casserole. Place Hershey Kisses
in mixture spaced across the dish.
In a large bowl, whip the soft cream cheese and peanut butter. Add the eggs,
melted butter, vanilla and beat well. Place Hershey Kisses spaced across the dish.
Spread peanut butter mixture over cake batter. Bake 45 minutes. Do not overbake.
Center will be gooey.
